Jennifer Jackson When we sample our herbal teas, people always remark on the strong juice-like taste! Herbal teas are the easier teas to brew because they don't contain Camellia Sinensis or "Tea". Without tea, these teas can be steeped for longer and at higher water temperatures! Below is my secret recipe for our fruit tea samples. Enjoy!

Jenny's Secret for Steeping Herbal Tea Samples

  1. Place 2 oz of tea in a large stock pot
  2. Add 2.5 quarts of water
  3. Turn on the stove to high and let tea roll boil
  4. Let tea "cook" for 10-15 minutes (this is the secret)
  5. Strain out tea with spaghetti strainer
  6. While still in the spaghetti strainer, press tea with the back of a spoon to get all the fruit juice out of the tea
  7. Add honey to taste

Our February monthly tea boxes have been sent!

I have been overwhelmed by the positive response from our customers!  I must have tasted over 100 teas and I am so excited to share my vast knowledge of tea with you!

 

For February, our theme was “Introduction to the World of Tea”.  I chose delicious teas from the 4 tea families, White, Green, Oolong and Black.  It is interesting to note that each of these types of teas come from the same plant, Camellia Sinensis.  The various tea types come about because the plant is processed differently.

 

White Tea - the baby tea leaves at the top of the Camellia Sinensis plant are plucked and dried.  The baby tea leaves contain the highest levels of anti-oxidants and the minimal processing makes these teas the healthiest.

 

Green Tea – the slightly larger tea leaves below the baby tea leaves are plucked, steamed and dried. The steaming of the Camellia Sinensis causes the tea leaves to become bright green which explains why it is called “green” tea.

 

Oolong Tea – the medium tea leaves toward the center of the Camellia Sinensis are plucked, steamed, half-fermented and dried.  The half-fermenting of the tea leaves makes this tea a nice highbred of the green and black teas.  Oolong teas are traditionally consumed after meals because they aid with digestion and assist with weight loss.

 

Black Tea – the largest leaves at the bottom of the Camellia Sinensis are plucked, steamed, fully-fermented and dried.  The full-fermenting of the leaves causes the leaves to turn black – hence the name – Black Tea.  Black teas have the largest amount of caffeine of all teas and can be used as an alternative to coffee.
